Tomato concentrate conversion to fresh tomato

aseptic-filled tomato concentrate as tomato source for ketchup-like sauces. In order to compare
tomato concentrate (without water) and fresh tomato (with water), the following
considerations have been taken:


Tomato concentrate minimum brix grade: 28º.
Fresh tomatoes minimum brix grade: 4,6º
28/4.6= minimum of 6 grams of fresh tomatoes required to produce 1 gram of tomato
concentrate.
Considering this conversion means that:


25,3 % of tomato concentrate used in normal ketchup equals to 152 grams of fresh
tomatoes.
35 % of tomato concentrate used in 0% sugar ketchup equals to 210 grams of fresh
tomatoes.
