Valencia.
Al tun tún, es la nueva apuesta de restauración
del empresario Valentín Sanchez (Valen & Cia), ubicado
en un edificio de los años 30 en el centro de Valencia.
El restaurante, en el chafán de la plaza América con la
calle Sorní, está abierto al público a través de grandes
ventanales y carpinterías de color verde carruaje. Estas,
juntamente con los toldos verdes exteriores, remarcan
los huecos de fachada recordando a los locales de las
capitales europeas del siglo pasado.
Como punto de partida, el proyecto está inspirado en los
bistrots franceses del siglo XIX, establecimientos populares donde se servia gran variedad de platos hechos con
alimentos frescos y saludables, si bien en este proyecto,
se ha revisado la estética desde una perspectiva más
contemporánea.
El restaurante, un antiguo garaje, es un local diáfano
de gran altura con un pequeño altillo abierto al doble
espacio. Bajo el altillo y como elemento central y protagonista se encuentra la cocina, visible por todas las
mesas que se disponen alrededor.

La barra, unión entre cocina y comedor se ha diseñado
más baja para facilitar la conexión entre los espacios.
Así los clientes sentados en cómodos taburetes, pueden
participar de la elaboración de los platos y la actividad
de los cocineros entorno a la isla de mármol blanco. El
sobre de la barra es de piedra negra y el frontal esta
forrado con las persianas antiguas existentes como recuerdo del local anterior, juntamente con la escalera
de madera desgastada que sube al altillo, que también
se aprovecha.
Al tun tún is the new renovation proposal by
businessman Valentín Sanchez ( Valen & Cia ), located in
a building from the ‘30s in the centre of Valencia.
The restaurant, at the intersection between plaza América
and calle Sorní, is accessible to the public through large
windows with carriage-green woodwork. Together with
the green exterior awnings, they emphasise the gaps in the
façade, bringing to mind the establishments of European
capitals of the last century.
As a starting point, the project was inspired by French bistros of the 19th century, popular establishments where a
wide variety of dishes were served with fresh and healthy
ingredients, although for this project the aesthetic has been
revised from a more contemporary perspective.
The restaurant, previously a garage, is a luminous and
high premises with a small open mezzanine halfway up.
Under the mezzanine and as a central and principal element is the kitchen, visible from all the tables which are
arranged around it.
The bar, which connects the kitchen and the dining area,
has been designed to be low down in order to facilitate
the connection between the spaces. This way the patrons,
seated on comfortable stools, can participate in the creation of the dishes and the chefs’ activity around a white
marble island. The bar top is made of black stone and the
front is clad with the existing old blinds as an echo of the
previous establishment, together with the worn wooden
staircase which leads to the mezzanine, also reused.
