Hake, the queen of white fish] ● Es el único espacio para no profesionales dentro del Salón del Gourmet El taller de los sentidos [The only space for non-professionals within the Gourmet Show. The workshop of senses] Al vapor, al horno, cocida, al grill, rebozada, en salsa… incontables son las maneras de cocinar este pescado que tan popular es en nuestro país. Se trata de un pez bastante voraz y dinámico. No suele aproximarse mucho a la costa y su hábitat natural está entre los 100 y los 1000 metros de profundidad. Una merluza grande puede alcanzar los 120 cm., pero lo habitual es que oscile entre 12 y 60 cm. Se alimenta de otros pescados, mariscos y crustáceos pequeños. Se pesca durante todo el año, pero sus mejores momentos son en otoño y en invierno y la más apreciada es la merluza de anzuelo o de pincho capturada en las frías aguas del Cantábrico. Las capturas europeas superan las 130.000 toneladas anuales, de las cuales, más de la mitad corresponden a España. It is highly digestible and has virtually no fat (65 calories and barely 2 gr of fat per 100 gr), making it perfect for anyone who likes healthy eating and is looking after their waistline. It is essential to keep its white flesh juicy and so it is not advisable to cook it for too long. It is rich in protein and also provides vitamins and minerals, though the latter not in any significant amounts. In any case, it is very healthy and tastes delicious. Es muy digestiva y apenas tiene grasa (65 calorías y apenas 2 gr. de grasa por cada 100 gr.) por lo que es perfecta para cualquier persona que desee comer sano y cuidar la línea. Para que su carne blanca esté en su punto es fundamental mantener su jugosidad y no cocinarla demasiado. Es rica en proteínas y también aporta vitaminas y minerales, aunque estos dos últimos no en cantidades significativas. En cualquier caso es muy sana y está buenísima. Los productos más exquisitos de la cocina mundial se darán cita en Madrid entre el 5 y el 8 de marzo, en la XXVI edición del Salón de Gourmets. Más de 1300 expositores, entre productores, comerciantes y compradores, llenarán, un año más, los pabellones de IFEMA. Se trata de un evento exclusivo para profesionales del sector, excepto en uno de sus apartados: El Taller de los Sentidos, que, un año más, será el único espacio abierto al público en general. En este Taller, los que lo visiten podrán descubrir la mayoría de los productos delicatesen que se ofertan en el Salón. Este espacio surgió con la finalidad de introducir a los visitantes no profesionales en el conocimiento del mundo de la alimentación. Desde sus inicios tuvo una gran acogida y por eso se han mantenido en ediciones posteriores.
