Recipes That Protect Your DNA

Chicken Basil Stir Fry
w/ Brown Rice
Serves 2-4
The Ingredients
1 lb. Boneless chicken thighs,
skin removed, fat trimmed off,
thinly sliced crosswise
4 tbsp Extra virgin olive oil
(EVOO)
4 cloves garlic, minced
3 tbsp oyster sauce
2 tbsp soy sauce
1/4 cup Chicken stock
2 bunches Thai basil leaves,
picked off stem
Directions
Heat oil in a skillet over high heat. When
hot, add minced garlic and stir for 20
seconds until fragrant.
Add the chicken and stir fry with a wooden
spoon for 2 minutes to cook through.
Add oyster sauce, soy sauce and chicken
stock. Mix gently to coat the chicken.
Toss in basil and gently turn meat over
leaves until they are wilted. Remove pan
from heat. Plate on a warm platter.
Serve over brown rice.

Crostini with Sun-dried
Tomato Tapenade
Makes 15-20 crostini
The Ingredients
1 Sourdough Baguette
1 cup sun-dried tomatoes,
finely minced (easiest if
tomatoes already packed in
EVOO
10 Kalamata olives, pitted and
chopped
1/4 cup Extra Virgin Olive Oil (if
tomatoes not already in oil)
1 tbsp. capers, drained
1 tsp. dried oregano
1 Pinch of salt
Directions
Preheat oven to 350°F.
Slice baguette in 1/2" slices. Place bread
slices on baking sheet. Bake for 10 minutes
until surfaces crisp. Remove and let cool.
Meanwhile, in a mixing bowl, mix sundried tomatoes, olives, capers, oregano,
and salt. Mix well with a spoon and
combine.
When bread slices have cooled, arrange
them on a serving platter and top each
slice with a spoonful of sun-dried tomato
tapenade mixture.
Serve at room temperature.

Makes 4 Cups
The Ingredients
1 cup walnut halves, raw
unsalted
1 cup almonds, raw unsalted
1 cup cashews, raw unsalted
1/2 cup dark chocolate chips
(70% or greater)
1/2 cup dried unsweetened
cranberries
Pinch of salt
Directions
Preheat oven to 350°F.
Place nuts on a baking tray and toast for
10 minutes. Remove and let cool.
Place nuts, chocolate chips, and
cranberries into a large mixing bowl and
combine together with a wooden spoon.
Add a pinch of salt for sweet/salty taste.
Transfer into an airtight food container, or
pack into a Ziploc bag to take with you.
