ll the charm of the South but with the luxuries
of a big city. In a nutshell, that would be the
answer if asked to describe the city of Puerto
Varas, 20 km from Puerto Montt in Chile’s Lake
District. The reason? Validivia’s green forests, one
of the most picture-perfect lakes in the country, the
typically tranquil pastures of the cities in the South
of Chile, topped off by a first-class tourist offering,

Uno de los más famosos es el Cumbres de Puerto Varas, el
que –a cuatro años de su inauguración– ya se ha transformado en una de las mejores opciones de alojamiento en la zona.
Ubicado justo frente a la costanera y con una insuperable vista al lago y a los volcanes desde todos los rincones del hotel,
cuenta con 90 habitaciones, divididas en cuatro categorías

enorme chimenea –que permanece prendida todo el año– recuerda inevitablemente a un refugio en medio del bosque. A

Otro de los puntos destacados es el restorán, que no por
nada fue elegido el año pasado como el Mejor Restaurante
de Regiones por el Círculo de Cronistas Gastronómicos. Su
chef, Claudio Úbeda, ofrece una carta basada en productos
y preparaciones típicas de la zona, con ingredientes marinos
como protagonista. ¿Uno de sus platos más famosos? El jamón de wagyu con milcao chilote de albahaca y tocino, y salsa de rosa mosqueta: sabores alemanes, mapuches y sureños
en una misma receta.
La ubicación del hotel es privilegiada no sólo por su cercanía al lago, sino que también por su accesibilidad a destinos
atractivos, como el pueblo de Cascadas y su largo canopy

the surrounding area – stone, furs, natural fibres and a lot of
wood. The hall and its enormous fireplace which is lit all year
round are reminiscent of a cabin in the middle of the woods,
on a larger scale, obviously.
Another of the hotel’s highlights is its restaurant which
didn’t win Best Regional Restaurant for nothing; it was awarded by the Círculo de Cronistas Gastronómico, the Chilean
Circle of Food Critics. The chef, Claudio Úbeda, has created
a menu incorporating local products and typical dishes of the
area with seafood options taking the limelight. One of his most
famous dishes is the wagyu ham served with bacon and basil
pancakes (milcao, a Chiloé dish) and a sweet briar sauce: flavours originating from Germany, the Mapuches and the South
of Chile in one dish.
The location of the hotel is exclusive – not just because of
its proximity to the lake, but it’s a gateway to popular tourist
destinations such as the town of Cascadas and its vast canopy

over native woodland, the charming village of Frutillar and its
imposing theatre Teatro del Lago, the town of Puerto Octay
and its old buildings, as well as the nearby waterfalls - the
Saltos de Petrohué, to name but a few. What’s more, the hotel
offers bikes for its residents to explore the city and surrounding areas at their leisure, perfect for sunny days.
If cycling isn’t your thing, the hotel also has deals with the
main tourist centres in the city which offer excursions to the
places mentioned earlier. The most popular are the boat trip
on Lake Todos Los Santos and rafting on River Petrohué.
