This is the Famicom. Looks like an NES - well, except that the
controllers are wired to the base, and instead of select and start,

The NES and SNES may have different plugs, but apart from the
SNES having an extra shift register for the extra buttons, it is
actually the same controller. Both have a sane and consistent
wiring pattern.
Doesn't look too bad, lines up with the NES well enough...

I don't even. There are things going on here that I haven't even
mentioned. The lines on the shift register for Select and Start are
tied to VCC. Ground I can understand, but 5v? I wanted to punch
something once I realized what was going on here.
