Unlike agave, which flowers only once in its lifetime, sotols produce a flower stalk every few years. Once the plant matures, it is harvested like agave and produced just like tequila or mezcal. Tequila is produced from the fermented sugars of the Tequilana Blue Weber agave plant; primarily in the Mexican state of Jalisco, and limited regions in the states of Guanajuato, Michoacan, Nayarit, and Tamaulipas. All authentic, regulated Tequilas will have a NOM (Norma Oficial Mexicana) identifier on the bottle, which represents governance of agave harvesting, production, bottling, & exporting of any 100% agave Tequila product. All of our carefully selected tequilas are made with 100% agave. BLANCO (1oz) Blanco (white) is the traditional tequila that started it all. This clear spirit is most often bottled straight from distillation, although it can be aged a maximum of two months in stainless steel or neutral oak barrels. Tasting Notes: black pepper, citrus, herbs, tropical fruit REPOSADO (1oz) Reposado (rested) is aged in any size oak barrel, from 2 months to one year. Tasting Notes: caramel, vanilla, honey, floral AÑEJO (1oz) Añejo (aged) is produced from aging a minimum of one year to no more than three years, in a small oak barrel. Tasting Notes: chocolate, tobacco, butterscotch, dried fruit EXTRA AÑEJO (1oz) Extra Añejo (extra aged) This is a relatively new category, for any tequilas aged over three years.
